Eggplant Casserole Recipe


1 large eggplant
2 pieces of bacon
1/4 cup chopped onion
1 jalapeno seeded and chopped
1 Roma tomato diced
2-3 cups of Mozzarella cheese


Peel 1 eggplant and boil until tender
Fry 2 pieces of bacon, crumble, set aside
Use the grease to saute' 1/4 cup chopped onion and one chopped jalapeno
Dice one Roma tomato and add to onion/pepper mixture
Cover and simmer for 20 minutes

Add mashed eggplant, bacon, and 1 cup grated Mozzarella cheese
Simmer 10 minutes
Cover bottom of a casserole dish with another cup of Mozzarella
Add mixture, sprinkle more cheese on top if desired.
Bake for 15 minutes at 350
