Pumpkin Turnovers

Are you tired of the same old pumpkin pie? Why not try these pumpkin turnovers? They are so yummy! Serve them at your Christmas party with a cream cheese frosting dip for a big hit!




Ingredients:
four 9 inch pie crusts
1 (16ounce) can pumpkin
3/4 cup sugar
1 teaspoon pumpkin pie spice
1 egg white
3 tablespoons sugar
1 tablespoon cinnamon 




Cut pie crusts into 2/1/2 inch circles with a biscuit cutter. Combine pumpkin, sugar, and pumpkin spice. Spoon 1 teaspoon of pumpkin mixture in the center of each circle. Fold in half and seal edges with a fork. Poke each pie with a fork for decoration. Brush with egg white and bake on greased cookie sheet at 450 for 10-12 minutes. Mix sugar and cinnamon and sprinkle on pies.


Cream Cheese Frosting Dip

Ingredients:
2 (8oz) packages cream cheese softened 
1 tablespoon lemon juice
1 tablespoon grated lemon rind
1 (16oz) can ready to spread vanilla frosting
1 cup finely chopped nuts

In a large bowl, beat cream cheese, lemon juice and rind, and vanilla frosting at medium speed of an electric mixer until well blended. Stir in nuts. Refrigerate until ready to serve.
