I had this salad over the Christmas holidays! It is wonderful, just had to share it with you all.
Fried Okra Salad
1 container Cherub or Cherry tomatoes
1/2 green Bell pepper (chopped)
2 green onions sliced
1/2 pkg bacon (cut up and fried)
1 small pkg frozen fried okra (or homemade). Cook okra in oven until browned
Vinegar Dressing
Mix until dissolved:
1/4 cup sugar
1/4 cup white vinegar
1 tablespoon olive oil
Mix tomatoes, pepper, and onion together with dressing; refrigerate until ready to serve. Before serving, pour veg/dressing mixture over okra and bacon. Gently stir to combine.
I hope my Canadian friends can get okra. Do they sell it up there?
