Really Love Your Peaches...

I live in the Peach Capital of Texas and it's that time of year again.



Tomorrow is the annual Parker County Peach festival.









If you've never had a juicy ripe fresh peach they are nothing like those icky, tasteless peaches you find in the supermarket that were picked too soon. Unlike some fruit, peaches do not ripen after they're picked, so it's best to get them straight from the tree in the dead heat of summer.




Here's my favorite peach pie recipe. It's so simple and delicious.



Ingredients

10 fresh peaches, pitted and sliced
1/3 cup all-purpose flour
3/4 cup white sugar
1/4 cup light brown sugar
1/4 cup butter


1 recipe pastry for a 9 inch double crust pie
Directions

Mix flour, sugar and butter into crumb stage.
Place one crust in the bottom of a 9 inch pie plate. Line the shell with some sliced peaches. Sprinkle some of the butter mixture on top of the peaches, then put more peaches on top of the the crumb mixture. Continue layering until both the peaches and crumbs are gone.
Top with lattice strips of pie crust.
Bake at 350 degrees F (175 degrees C) for 45 minutes, or until crust is golden. Allow pie to cool before slicing. Best when eaten fresh.

  1. I should really try that peach pie recipe, looks delicious. I love Summer, it is truly is fruits season here. My hometown in the West Coast offers blueberries, strawberries, raspberries, cranberries (pretty much every berry). Also notable is cherries and corn. In my backyard there is even a persimmon tree.

    Looking forward to visiting the farmer's markets and to go u-picking.

  3. I live in Georgia, the Peach State, so we love our peaches here. I wish I had a peach tree like yours in my yard.

  5. They do an annual strawberry festival in a town near me called Long Grove Village that's just fantastic. They also do a chocolate one. LOL. Favorite recipe for strawberries. Hmmm. I like them natural, but one great recipe is a strawberry margarita pie. Very nice and cool and fresh for summer. I cheat and use a store-bought graham cracker crust when I make it, but I'll list the whole recipe, which is from Jello/Kraft, btw.

    Strawberry Margarita Dessert

    CRUST
    1-1/4 cups crushed pretzels
    6 Tbsp. butter or margarine, melted

    PIE FILLING
    1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
    1 can (14 oz.) sweetened condensed milk
    1 cup pureed strawberries
    1/2 cup lime juice
    1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

    MIX pretzel crumbs and butter in 13x9-inch pan; press onto bottom of pan. Refrigerate until ready to use.

    BEAT cream cheese and condensed milk in large bowl with mixer until well blended. Add strawberries and lime juice; mix well. Gently stir in COOL WHIP; pour over crust.

    FREEZE 6 hours or until firm. Remove from freezer 15 min. before serving. Let stand at room temperature to soften slightly before cutting to serve.

  6. Next to Strawberries, Peaches are my next fav fruit... I love peach upside down cake... I have never made it, but my aunt makes the bes one.

    Cherries are my absolute favorite fruit. We can't grow them in Texas. The heat burns up those delicate beauties.

  9. apples, strawberries and raspberries grow up here...yummy deliciousness. I make a strawberry short cake that i find just yummy. cant think of all the ingredients just now but the finished part is. mashed up strawberries with some sugar sprinkled in, spooned over the crumbled up short cake, we usually add milk but if you don't like that there's a cream i got from rachel ray that is really good with it and the is just
    4 oz cream cheese
    3 tbsp sugar
    1/2 cup heavy cream

    super good and add sugar to your sweetness
