The Clone got so scared after reading about Jenny Papworth, she ran into the kitchen and whipped up a batch of Pioneer Cornbread. She used a recipe she found online from Elizabeth Lane. Nothing like hot buttered bread to calm your nerves!
Pioneer Cornbread
1 cup white flour
1/4 cup sugar
1 teaspoon salt
3/4 teaspoon baking powder
1 cup corn meal
1 beaten egg
3 Tablespoons melted shortening
1 cup buttermilk
3/4 teaspoon soda
Sift together flour, sugar and baking powder. Put in pan with corn meal. Mix well and add egg, shortening and buttermilk, to which the soda has been added to make it foam. Mix well and pour into greased muffin tins or 9 inch square pan. Bake at 400 degrees for about 20 minutes or until it tests done.

ReplyDeleteI adore corn bread, especially when I've made chili, which is funny because that's on my menu for dinner today. Good timing! ;)

Thank you! I don't have good luck with cornbread but I bet I will with this recipe! I'm making it this weekend - fixing a big pot of chili and this will set it off beautifully!
ReplyDeleteSo glad to share this recipe. I have been looking for a good one as well. Most of the time, I end up using Jiffy. It's good, but too sweet. This really is delicious. Hope you all like it.
